Our Pizza Story

The Story of Bowie pizza start with me, My name is Eric and I come from a close-knit Italian family, where the kitchen was more than just a room, it was the heart and soul of our home. Some of my earliest memories are of watching my mother work her magic, crafting pizzas from scratch. I can still see her kneading the dough with care, letting it rise as if it were alive, and then transforming it into a meal that was more than food, it was a moment of togetherness, laughter, and love in our family.

In 2005, shortly after getting married, I took my first step into the fast-food industry, pursuing the dream of owning my own business. But it wasn't until 2013, when we moved into a house with a wood-fired pizza oven, that my passion was reignited. That simple oven became a source of curiosity, starting a journey to the art of making pizza. It was a return to childhood memories, but this time, I was determined to create something that would connect with others the way my mother’s cooking connected with our family.

In 2017, I took a trip to Italy that would forever change my perspective. I tasted pizzas like never before! Made with the freshest ingredients and served in warm, inviting spaces that felt like home. Each bite was a revelation, each meal a reminder of why food matters. I returned home with more than memories; I came back with a dream.

By 2018, that dream began to take shape. I thought of a place that would bring those authentic flavors and that sense of belonging to my city. I imagined Bowie Pizza as more than just a restaurant; it would be a community hub where the best ingredients met long- fermented dough, and where every customer felt like part of the family. One morning, I woke up with the name "Bowie Pizza" in my mind and it got stuck with me. It just felt right. Later, I found out that there is a small town in Arizona, famous for its wheat, named Bowie! They used to make flour of the highest quality. It sounds like a happy match; great pizza starts with great flour, and Bowie was the perfect fit!

The journey hasn’t been easy. The pandemic hit us hard, slowing our progress and testing our resolve. But in 2022, just when things seemed uncertain, I had the chance to share my vision with childhood friends. They saw something special in the dream that had driven me for years. Their diverse experiences brought new ideas and a sense of purpose, turning this dream into something tangible, a real project.

Now, as Bowie Pizza comes to life in Gainesville, I am reminded of the long road we have traveled from my mother’s kitchen to Italy and back, and through all the challenges in between. Bowie Pizza is not just about great pizza; it is about connection, resilience, and the belief that the best things in life are worth the wait.
